The Italian Chamber of Commerce in Houston, in collaboration with AICIG, the Conrad N. Hilton College, the Art Institute of Houston and the Culinary Institute Le Notre, organised two Masterclasses for more than 70 participants including chefs, restaurateurs, importers/distributors, young chefs, journalists/bloggers, influencers and nutritionists, focusing on the main Italian AOP and PGI products and the most famous recipes containing these products.  The teachers, Margareth Cicogna - representing the Piave and Grana Padano consortiums – and Federico Bolla - representing the Parmigiano Reggiano and Pecorino Romano consortiums – presented the distinct European product certification process which incorporates specific production protocols, thorough controls and maturation periods aimed at producing Made of Italy specialities of the highest level. The masterclasses took place at the impressive headquarters of the local newspaper Houston Chronicle, with a preview presentation on 21 September during the prestigious The Culinary Stars event assigning awards to the 100 best restaurants in Houston.
