Risotto with Nettle and Piave Vecchio PDO

Ingredients (for 4 people):

Grated Piave Vecchio cheese: 100 g
Nettle leaves: 400 g
Rice: 300 g
1/2 onion
Olive oil: 100 ml
Butter
Salt: to taste
Pepper: to taste

Parboil the nettle leaves in slightly salted water for a few minutes, then brown in a pot with the oil and the chopped onion. Add the rice and toast it for a few seconds, letting it rise by wetting it with any water left over from boiling the nettles (if this is not sufficient you can also prepare a light stock using a stock cube). Serve very hot, mixing with butter and the grated Piave Vecchio PDO.
